Potato Dumplings

Ingredients

potato (boiled, dough)
300 g
plain flour (dough)

egg (dough)

lard (dough)

ground black pepper

parsley leaves

Instructions

Boil the potatoes in their skins, cool. Peel the cold potato and push. Add the egg, salt, lard and flour so much so that we have smooth dough. Let dough rest 20 minutes. On floured board rolling the dough about 5 mm thick from which it generates about 5 cm long and 1 cm thick dumplings. Powered dumplings then inserted into boiling salted water. When the dumplings float to the top, we choose them and place in a baking dish. Add a little oil and mix. Add the pan 2 tablespoons of butter and fry the onion rings disassembled golden brown. Put aside.  Into the pan, add more butter and fry the dumplings until golden brown. If necessary, we can add more butter. Season with salt to taste, sprinkle with ground black pepper. Before serving, sprinkle fried onions and chopped parsley.
