Mushrooms soup recipe with Tarragon

Ingredients

400 g
mushrooms

onion
1000 ml
broth (vegetables)
180 ml
whipping cream
1 T
flour
 
salt
 
ground black pepper
 
tarragon
 
parsley leaves
 
oil

Instructions

Put aside from the mushrooms 3-4 pieces, slice and fry in butter a little. Other mushrooms cut into cubes.
For a small amount of oil sauté the chopped onion and add the diced mushrooms. To taste season with salt, ground black pepper and tarragon. Together simmer until the juice has evaporated. Then add a handful of chopped parsley and sprinkle with flour. Pour stirring vegetable broth. Add the cream and bring to a boil. Mix with a stick blender all in until creamy. Add the rest of the parsley and season as desired. Serve with fried mushroom slices and fresh bread.
