Bread from spelled flour

Ingredients

active sourdough

Instructions

Mixed the active sourdough   with water, add sifted flour, olive oil and mix everything quickly. Let stand for 10 minutes and then add seeds (of each type of a handful). All thoroughly mixed and then cover with plastic wrap and let rise for 3 hours. Then add salt, mix everything into a bowl put baking paper and put bread on it. Cover the bowl with plastic wrap and let rise for 3 hours.

Meanwhile, turn on the oven; put the bottom of the pot with water and baking bowl with lid. Finished dough removed by means of baking paper to a baking dish, with blades we cut twice and then top with cold water. Sprinkle with sesame seeds and cover with a lid. Thus bake for 15 minutes at 230 ° C, temperature was lowered to 210 ° C and bake for 10 minutes. Then the temperature was lowered to 200 ° C, put the lid off and bake for 25 minutes. Put the finished bread on the grid, and then top with cold water and leave to cool.
