Mix the active sourdough with lukewarm water, add the sifted flour, salt, ground cumin and ground linseeds and mix everything. Cover with cling film and leave to rest for 10 to 12 hours (overnight). The next day, sprinkle with flour and interleave the dough from the edges to the middle. Begin folded top down, bottom up, right to left, left to right. Put the dough into the mold with baking paper, cover and let rise for 90 minutes.
