Description

Raspberry Cheesecake

Ingredients

100 g
butter
200 g
butter biscuits
250 g
low fat curd
400 g
Mascarpone cheese
5 T
xylitol
200 ml
whipping cream
1 pk
Vanilla sugar
 
lemon juice
500 g
frozen raspberries
100 ml
hot water
20 g
gelatin powder
50 g
dark chocolate

Instructions

Crushed biscuits and pour melted margarine. Mix everything thoroughly. Take into spring form with foil (or plastic bag) and put into the biscuit dough the bottom.

Beat of whipping cream and vanilla sugar the hard foam. Mix mascarpone with sweetener and lemon juice. Add the low fat curd and mix. Add the hard foam cream and mix. Dissolve gelatin in hot water, add 1-2 tbsp. the mascarpone cream and stir smooth paste. Pour one-third cream of the biscuit and sprinkle with frozen raspberries. Pour the rest of the cream on top and decorate with grated dark chocolate. Let cake stand in the refrigerator for several hours and cut.
